"One of my favorite dips. Now, I LOVE deviled eggs; but, sometimes they are a pain to make. This is a really easy dip; and, don't worry if you don't get the perfect hard boiled eggs. They all get chopped, and mixed up in the bowl ... with all the same flavors as a deviled egg. Great to serve with a variety of raw vegetables; ham cubes or seared bacon bites. And, how about grilled asparagus, baby potatoes, chips, bread cubes, etc. I really suggest you double this recipe when taking it to a party ... it goes very quickly. Prep time does NOT include time for the dip to chill."

Step by Step Method

FOR THE EGGS


Step 1

There are many recipes for hard boiled eggs. Use your favorite. The basic method is cold water, add the eggs; and, bring to a boil. Cook 1 minute, cover and turn the heat off. Wait 12 minutes; then, rinse under cold water, and peel. TIP: If you have one of those egg slicers - simply slice them in 1 direction; flip, and slice in the other. Perfectly chopped eggs in a flash.

Step 2

Now, if you don't want to make your own eggs; you can even find hard boiled eggs in the dairy section of most grocery stores.

FOR THE DIP


Step 3

Add everything except the eggs to the bowl and mix to combine. Add the eggs last; and, make sure everything is well mixed. I list the pickle relish as optional; I really like it, but that is up to you. Chill at least 1 hr before serving.

Step 4

Serve and ENJOY! ... Just like any dip, you can serve this with pretty much anything. Raw vegetables, blanched asparagus or baby new potatoes, bread cubes, ham cubes, seared bacon bites, crackers, etc. And don't forget a little garnish if you want. Sometimes I will put an egg slice on top to let people know what it is.

This is very tart...due to the yogurt and lemon juice...so I added a bit of sugar and it really helped...I made this for a family get together for Labor Day...the grandson couldn't get enough...it does make a lot...but like the poster said double it if you are taking to a party or potluck...I used the Dijon mustard, some dill relish and served it with a variety of crackers...made for "What's On The Menu" tag game...
