Ingredients

The ingredients are:
  • 6 large eggs (hard boiled, peeled and diced)
  • 2 scallions, diced (white and green parts)
  • 1/2 cup Greek yogurt (plain)
  • 1/2 cup cream cheese (softened)
  • 1 teaspoon pickle relish, optional
  • 1 tablespoon Dijon mustard (or yellow mustard, your choice)
  • 1/4 teaspoon hot sauce (to taste)
  • 2 tablespoon fresh lemon juice
  • 1 tablespoon parsley, chopped (more or less to taste)
  • Kosher salt to taste
  • Pepper to taste
  • Garnish
  • Fresh chives, chopped
  • Paprika

How to Make

  • FOR THE EGGS

  • Step 1: There are many recipes for hard boiled eggs. Use your favorite. The basic method is cold water, add the eggs; and, bring to a boil. Cook 1 minute, cover and turn the heat off. Wait 12 minutes; then, rinse under cold water, and peel. TIP: If you have one of those egg slicers - simply slice them in 1 direction; flip, and slice in the other. Perfectly chopped eggs in a flash.

  • Step 2: Now, if you don't want to make your own eggs; you can even find hard boiled eggs in the dairy section of most grocery stores.

  • FOR THE DIP

  • Step 3: Add everything except the eggs to the bowl and mix to combine. Add the eggs last; and, make sure everything is well mixed. I list the pickle relish as optional; I really like it, but that is up to you. Chill at least 1 hr before serving.

  • Step 4: Serve and ENJOY! ... Just like any dip, you can serve this with pretty much anything. Raw vegetables, blanched asparagus or baby new potatoes, bread cubes, ham cubes, seared bacon bites, crackers, etc. And don't forget a little garnish if you want. Sometimes I will put an egg slice on top to let people know what it is.
