"This is a recipe I got from a dear friend while she was on the Atkins diet. I just fell in love with the flavor. I now make them as an appetizer for Thanksgiving every year. I never make the old mayo mixture anymore. I hope you enjoy!"

Step by Step Method

Step 1

Cut the eggs in half, remove the yolks and place them in a bowl.

Step 2

Reserve the whites.

Step 3

Add the mustard, mayonnaise, curry powder, cayenne pepper, salt & pepper to the egg yolks and mix well.

Step 4

Divide the yolk mixture evenly among the reserved whites, mounding it slightly.

Step 5

Serve immediately or store, covered in the refrigerator for up to 1 day.

These were good eggs to make. A different set of flavors than I usually make. I even added a pinch of red pepper and it didn't eve n make my mouth burn. I did add a bit more mayo and mustard because my filling was too dry for me.

I see no reason to make deviled eggs any other way from now on. :) Wow, we loved the curry in there, as I knew we would! I put a few drops of fresh lemon juice in the mix, but that's just me. Only one problem, Hubby and I couldn't help ourselves from going back "for one more," this afternoon, and now we're not hungry for dinner! LOL YUMMY

Daily Inspiration

Made these delicious curried eggs today to go with our 4th of July meal. The curry flavor really sets these eggs apart from other stuffed egg recipes and they were a nice change of pace.
