" I am not sure where I got this recipe but it was with the huge bunch I have to post here on Zazz. It is very very tasty. Great for a picnic. If you haven't tried Quinoa do try it. Very healthy and really tasty. I don't know what to compare it with. It is gluten free, low in fat and has great protein. Follow cooking instructions on the carton. Combine whatever herbs you like. I have not included the cook time for the quinoa - do it ahead so it is cooled. I like to sprinkle some sweet chopped onion on top when I serve it"

Step by Step Method

Step 1

Mix together the curry powder, cumin, fresh herbs, oil and cider viniger

Step 2

Pour over the cooked quinoa, mix with a fork, add peas, mix

Step 3

Place in fridge to completely chill the salad. Serve over lettuce leaves

Absolutely delicious!! I used red organic pre-washed quinoa, a wonderful Madras curry, fresh basil and the peas. The fresh lemon juice brightened all the flavours. The only thing I changed, avocado oil for the olive oil. Definitely a keeper for us! Sorry no photo, my camera died. Thanks Bergy for another awesome recipe!
