  • 2 cups quinoa, cooked
  • 1 tablespoon curry powder
  • 1/2 teaspoon cumin
  • 1/ cup minced fresh herbs (parsley, cilantro and basil)
  • 2 tablespoon extra virgin olive oil
  • 1/2 lemon, juice only
  • 1 teaspoon apple cider vinegar
  • 3/4 cup frozen peas, thawed (optional)

How to Make

  • Step 1: Mix together the curry powder, cumin, fresh herbs, oil and cider viniger

  • Step 2: Pour over the cooked quinoa, mix with a fork, add peas, mix

  • Step 3: Place in fridge to completely chill the salad. Serve over lettuce leaves
