Cumin-Seared Steak with Onion Saute
"Great for a weeknight, but also company worthy! The flavorful onion and tomato saute makes a great base for the well-seasoned steak! We often double the onion/tomato saute so we have some with every bite! We use ribeye steak because it's tender and our favorite, but you can use other cuts of steak, including flank steak."

Step by Step Method
Step 1
In a small bowl, combine the cumin, 1/4 teaspoon of the oregano, and the salt and pepper. Set aside.
Step 2
With a sharp knife, score shallow cuts into the steak, perpendicular to the grain and about 1/2 inch apart. Next score the steak again at a 45-degree angle to the first set of cuts. Turn the steak over and repeat.
Step 3
Rub the cumin mixture onto both sides of the steak, getting into the grooves.
Step 4
Halve the onion and slice thinly. Set aside in a medium bowl. Core the tomato, then chop. Add to the bowl with onion. Mince the garlic cloves and add to the bowl. Set aside.
Step 5
Heat a cast iron skillet. Add the oil and continue over medium heat until barely smoking. Add the steak and cook until browned and medium rare (125 F). Flip only once. Remove from pan and tent with foil.
Step 6
Add the butter to the same pan. Stir until melted. Add the onion, tomato and garlic. Add the remaining 1/2 teaspoon oregano and 1/2 teaspoon salt. Cook until the onion starts to wilt, about 5 minutes.
Step 7
Add the lime juice and the accumulated steak juices. Stir until slightly reduced, about 1 minute. Remove from heat. Season with salt and pepper to taste.
Step 8
Slice the steak thinly and against the grain.
Step 9
To serve, place some of the onions on the dinner plate. Place some slices of steak over the onions. Sprinkle with some of the chopped cilantro and serve with a lime wedge alongside to serve.
