Step by Step Method

Step 1

Saute onions and garlic in olive oil

Add to crockpot

Add everything else

Cook on low 8 hours adding more water if needed

Take out ham hocks chop debone and put back in beans

Remove bay leaves before serving

Step 7

Season to taste

I love white bean and ham soup! I've never done it in the crock pot though. I only had 12 ounces of beans so reduced the water to 3 cups and the spices accordingly. I started at 7:30 am and checked the liquid when I came home for lunch at 12:45. They were dry so I added 2 cups of water. I only had 1 ham hock, so added some extra diced ham to make up for the missing meat. I turned the crock pot on high when I go home from work at 5 because the beans were still tough. After one hour on high, they were perfect. Delicious....served with honey cornbread and it really hit the spot!!
