"A different recipe that is very tasty. Get everything together and put it together jusr before serving, I think you will be as surprised as I was how delicious this recipe is. I used very little oil. The recipe was originally from the BC Liqour Board Magazine"
Paint the baguette slices with olive oil on one side.
Broil baguette slices until golden, set aside.
In a food processor add blanched pea, 3 tbsp olive oil, salt & pepper, creme fraiche, half of the lemon zest and lemon juice. Process until chunky.
In a small bowl, mix remaining zest, ricotta cheese, some salt & pepper to taste.
Spread 2 tbsp ricotta mixture on each baguette slice. Top with 2 tbsp pea puree.
Garnish with shaved cheese & chives.
