Ingredients

The ingredients are:
  • 320 grams frozen peas (blanced for 30 seconds,then shocked in ice water, 2 cups)
  • 3 tablespoons olive oil (virgin olive oil)
  • 1/4 cup olive oil (virgin olive oil)
  • Salt & pepper, to taste
  • 1/4 cup creme fraiche
  • 1 lemon (zest of 1 lemon, divided)
  • 4 tablespoons fresh lemon juice
  • 1 cup ricotta cheese
  • 324 grams baguette bread (1 loaf, sliced into 3/4" slices on the bias)
  • 4 ounces pecorino romano cheese (shaved)
  • 4 tablespoons chives, chopped (for garnish)

How to Make

  • Step 1: Paint the baguette slices with olive oil on one side.

  • Step 2: Broil baguette slices until golden, set aside.

  • Step 3: In a food processor add blanched pea, 3 tbsp olive oil, salt & pepper, creme fraiche, half of the lemon zest and lemon juice. Process until chunky.

  • Step 4: In a small bowl, mix remaining zest, ricotta cheese, some salt & pepper to taste.

  • Step 5: Spread 2 tbsp ricotta mixture on each baguette slice. Top with 2 tbsp pea puree.

  • Step 6: Garnish with shaved cheese & chives.
