Step 1: Paint the baguette slices with olive oil on one side.
Step 2: Broil baguette slices until golden, set aside.
Step 3: In a food processor add blanched pea, 3 tbsp olive oil, salt & pepper, creme fraiche, half of the lemon zest and lemon juice. Process until chunky.
Step 4: In a small bowl, mix remaining zest, ricotta cheese, some salt & pepper to taste.
Step 5: Spread 2 tbsp ricotta mixture on each baguette slice. Top with 2 tbsp pea puree.
Step 6: Garnish with shaved cheese & chives.
