Step 1

Combine cornstarch, water, and soy sauce in a large plastic resealable bag. Add potatoes, seal bag, and shake to coat. Marinate in the refrigerator for 1 hour. Drain and dry on paper towels.

Step 2

Preheat oven to 375 degrees F and coat a baking sheet with nonstick cooking spray. Place potatoes on baking sheet, Coat the fries with an olive oil cooking spray or olive oil in a spray bottle. Sprinkle salt over the fries.

Step 3

Bake for 30 to 35 minutes, until fries soften and turn golden.

mmmYUM ! excellant crunchy fries, i too left the skin on, turned out nice and crunchy, we loved them!Mine ended up in the fridge for about an hour and a half and they took 40 minutes in my oven to reach a perfect crunch. I'll be making these again thanks!! Aug 27/13 made our fav chips again, mmm wonderful we love them!!

First words out of DH's mouth "These fries are awesome!" Love the technique. I left the skin on the potatoes and cut them like normal fries. However, next time I think I will cut them thinner as we both like very crunchy fries. Served them with chipotle ketchup. These were a real treat as we don't eat a lot of fries.
