"This is a great minestrone. The first time that I made it was so that I could use up some cabbage. My family loved it and so now I improvise and add pasta or whatever else I have that sounds good at the time. This came from Betty Crocker Creative Recipes # 133."

So easy to make and so delicious and I think I will end up with more than 10 serves. I made it vegetarian by using vegetable stock and did sub leek for the onion and soaked some dried white beans over night and after an hour of cooking was ready to serve with some crunchy bread for a very satisfying lunch, thank you lazyme made for Pick Me tag game under the 48 hour rule. UPDATE - definitely more than 10 serves for after 2 helpings I filled up 8 two cup containers for the freezer, thanks lazyme for the delicious freezer stash.
