Crockpot Cola Pork Roast & Bean Soup

Step by Step Method
Step 1
Heat some oil in a skillet to medium heat.
Step 2
Season pork roast with salt and pepper. Add to oil and brown well on all sides. Remove to crockpot. Add onions, saute until soft. Add garlic, saute for a few minutes. Add to crockpot.
Step 3
Add the brown sugar, salsa and cola; mix everything very well.
Step 4
Cover and cook on low for 6-8 hours.
Step 5
After pork has cooked, take the pork out and shred.
Step 6
Add the pork back to the crock pot. If you need more liquid, add a little more coca cola.
Step 7
Add the beans, corn and juice from the can, and cooked rice, season with salt and pepper.
Step 8
Heat through by cooking on low for another 1/2 hour.
Step 9
Serve in big bowls, topped with shredded cheese and crushed tortilla chips.
