Step by Step Method
Step 1
In a lrg bowl, whisk eggs, onion, pepper & flour. Stir in potatoes, turkey & stuffing.
Step 2
In a lrg skillet, heat butter & oil over med-high heat. Working in batches, drop potato mixture by 1/2 cupfuls into pan & press to flatten slightly. Fry 4-5 min on ea side or until golden brown & heated through.
Step 3
Drain on paper towels & serve w/turkey gravy, butter/syrup, scrambled eggs, fruit, etc.

NOTE #1: YIELD = 12 patties or 2 per person

NOTE #2: Some reviewers mentioned the patties did not hold together well & adding 1/2 cup flour was suggested. Those that followed this suggestion said it corrected the issue, so I added that to the recipe.
