Step by Step Method

Step 1

In a shallow pie pan combine crushed oyster crackers, Ritz crackers, Parmesan, parsley, chives, thyme, Old Bay, and 2 teaspoons garlic powder.

Step 2

Place flour, seasoning salt, and pepper into a second pie pan.

Step 3

In a shallow bowl combine eggs, milk and hot sauce.

Step 4

Pour 1/4-inch layer of olive oil into a large skillet and set over medium-high heat.

Step 5

Dip fish in flour, then eggs, then in the crushedcracker combination.

Step 6

Fry fish in the hot olive oil for about 5 minutes, flipping once midway through cooking time, until cooked through (Fry 2 fillets at a time).

Very crisp delicious sole fish. I put the crackers, Parmesan, fresh parsley, fresh chives, fresh thyme, old bay, and garlic powder in the food processor to make the coating, made enough for 6 but just used 2 fillets for supper and froze the rest of the coating to try on some cod, it is a very tasty combination. We loved the touch of hot sauce to finish it off. Used veggie spray to fry it, worked fine, but the photos look too dark, it was actually a beautiful dark brown and very crisp.
