Ingredients

The ingredients are:
  • 1 cup crushed oyster crackers
  • 1/3 cup crushed Ritz crackers
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley leaves
  • 3 tablespoons chopped fresh chives
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon Old Bay seasoning
  • 2 teaspoons garlic powder
  • 1 cup all-purpose flour
  • 1 teaspoon Lawry's Seasoning Salt
  • 1/2 teaspoon ground pepper
  • 2 large eggs, beaten
  • 2 tablespoons milk
  • 1 to 2 teaspoon hot sauce
  • Olive oil
  • 6 to 8 fish fillets (sole, basa, tilapia whatever you like)

How to Make

  • Step 1: In a shallow pie pan combine crushed oyster crackers, Ritz crackers, Parmesan, parsley, chives, thyme, Old Bay, and 2 teaspoons garlic powder.

  • Step 2: Place flour, seasoning salt, and pepper into a second pie pan.

  • Step 3: In a shallow bowl combine eggs, milk and hot sauce.

  • Step 4: Pour 1/4-inch layer of olive oil into a large skillet and set over medium-high heat.

  • Step 5: Dip fish in flour, then eggs, then in the crushedcracker combination.

  • Step 6: Fry fish in the hot olive oil for about 5 minutes, flipping once midway through cooking time, until cooked through (Fry 2 fillets at a time).
