Step 1: In a shallow pie pan combine crushed oyster crackers, Ritz crackers, Parmesan, parsley, chives, thyme, Old Bay, and 2 teaspoons garlic powder.
Step 2: Place flour, seasoning salt, and pepper into a second pie pan.
Step 3: In a shallow bowl combine eggs, milk and hot sauce.
Step 4: Pour 1/4-inch layer of olive oil into a large skillet and set over medium-high heat.
Step 5: Dip fish in flour, then eggs, then in the crushedcracker combination.
Step 6: Fry fish in the hot olive oil for about 5 minutes, flipping once midway through cooking time, until cooked through (Fry 2 fillets at a time).
