Step by Step Method

Step 1

Slice the baked potatoes into 1/2 inch thick slices and place in a bowl.

Step 2

Add remaining ingredients and toss lightly to coat.

Drizzle a bit of avocado oil over a parchment paper lined baking sheet and pour the potatoes onto paper; cook in preheated 425 degree Fahrenheit oven for 20 minutes.

Loved the flavor from using baked potatoes. I added garlic powder for even more flavor, and lots of pepper! We had eggs, bacon and toast with them for breakfast. Good one!
