Step by Step Method

Step 1

Cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet or pan, heat olive oil over medium heat. Add the minced garlic and diced onion, and sauté until fragrant and softened.

Add the roasted and sliced red peppers to the pan, along with the smoked paprika, dried oregano, and red pepper flakes. Stir well to combine and cook for a few minutes to allow the flavors to meld.

Pour in the diced tomatoes, tomato paste, and heavy cream. Stir to combine and simmer for about 10 minutes, allowing the sauce to thicken slightly.

Season with salt and pepper to taste. Adjust the seasoning and spiciness according to your preference.

Add the cooked pasta to the skillet and toss to coat the pasta evenly with the creamy sauce.

Cook for an additional 2-3 minutes, stirring occasionally, to ensure the pasta is well-coated and heated through.

Serve hot, garnished with fresh parsley or basil. Optionally, sprinkle grated Parmesan cheese on top.

We liked this easy dish. I doubled the pasta (using whole wheat penne pasta) and used 3 bell peppers. I also used 1 cup of cream plus 1 cup of water. I also topped off the pasta with about 4 oz Parmesan. With all my additions this made a lot and was enjoyed by all. Thanks for sharing!
