Step by Step Method

Step 1

Heat oven to 350 degrees Fahrenheit.

Step 2

Stir the first seven ingredients together in a medium bowl.

Step 3

In another bowl, combine the flour, baking powder, and salt.

Step 4

Add the flour mixture to the medium bowl and stir until just combined.

Step 5

In a different small bowl, mix the frozen cranberries with the one tablespoon of flour.

Step 6

Pour the cranberries into the batter, mixing, then pour into a greased 9 x 5 bread pan.

Step 7

Bake it at 350 degrees Fahrenheit for 55 minutes or until a fork inserted in the center comes out clean.

Step 8

Let the bread cool for 10 minutes after taking it out, then put it on a wire rack to cool.

Step 9

TO MAKE THE GLAZE:

Step 10

Mix all the glaze ingredients (powdered sugar, orange juice,zest, and vanilla extract) in a bowl.

Step 11

When the bread has cooled off, spread the glaze on top of the bread.

This was delicious! Fresh squeezed OJ is a must here, the flavor really shines through, and with the tart cranberries it is a winning combination. I had this sitting just as pretty as you please on my counter when unexpected guests arrived. Poof! It was gone! But thoroughly enjoyed, and I'm making another loaf for Hubs and me tomorrow! Quite yummers! We love orange and cranberries and this version is so good. I actually added more than 2 cups cranberries because I wanted to use up the whole bag of cranberries I had in the freezer. I think it was about 2 3/4 or 3 cups. Can't wait to have this again with coffee tomorrow. Make this, you'll like it. Thank you, WAIGEN, for sharing. I too was concerned about the thickness of the batter, but it was all for not. The bread came out beauteously. I always have quick breads toasted and this was a perfect balance of sweet and tart. Total YUM! Thank you for sharing! Made for Billboard Recipe Tag.

Daily Inspiration

This cranberry orange bread is really delicious and flavorful. I have to admit that I was a little concerned as the batter was quite thick, but the bread turned out well. The bread is delicious on it's own w/o the icing on top. I decided to use much less sugar for the topping and it worked great for us. I'm not a big "orange" fan in recipes, but I have to admit the orange really complimented this bread. : )
