  • 3/4 cup granulated sugar
  • 1/3 cup milk
  • 2 tablespoons freshly squeezed orange juice
  • 3 tablespoons orange zest
  • 1/2 cup oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups cranberries, frozen
  • 1 tablespoon all purpose flour
  • FOR GLAZE
  • 1 cup powdered sugar
  • 2 tablespoons freshly squeezed orange juice
  • 3 tablespoons orange zest
  • 1/2 teaspoon vanilla extract

How to Make

  • Step 1: Heat oven to 350 degrees Fahrenheit.

  • Step 2: Stir the first seven ingredients together in a medium bowl.

  • Step 3: In another bowl, combine the flour, baking powder, and salt.

  • Step 4: Add the flour mixture to the medium bowl and stir until just combined.

  • Step 5: In a different small bowl, mix the frozen cranberries with the one tablespoon of flour.

  • Step 6: Pour the cranberries into the batter, mixing, then pour into a greased 9 x 5 bread pan.

  • Step 7: Bake it at 350 degrees Fahrenheit for 55 minutes or until a fork inserted in the center comes out clean.

  • Step 8: Let the bread cool for 10 minutes after taking it out, then put it on a wire rack to cool.

  • Step 9: TO MAKE THE GLAZE:

  • Step 10: Mix all the glaze ingredients (powdered sugar, orange juice,zest, and vanilla extract) in a bowl.

  • Step 11: When the bread has cooled off, spread the glaze on top of the bread.
