"A lovely sauce to serve with ham, roast chicken or roast turkey. I found adding just a little glace or preserved ginger added a beautiful flavor to this sauce, but I have posted the recipe as written."

Step by Step Method

Step 1

Combine the thawed frozen cranberries, orange juice, brown sugar, cinnamon stick and finely grated orange rind in a medium saucepan and cook over low heat, stirring for about 3 minutes or until sugar dissolves.

Step 2

Increase the heat to medium-high and bring to the boil; reduce the heat to medium and simmer, stirring occasionally, for 6-10 minutes or until mixture thickens slightly. (Remove when the consistency is as you like it).

Step 3

Remove from heat and discard cinnamon stick and set aside for 15 minutes to cool.

Step 4

Transfer the relish to a small serving dish & place a piece of plastic wrap directly on the surface of the relish until it is completely covered then place in the fridge for 1 1/2 hours to chill.
