Ingredients

The ingredients are:
  • 300 grams frozen cranberries, thawed
  • 125 milliliters orange juice (1/2 cup)
  • 100 grams brown sugar, firmly packed (1/2 cup)
  • 7 centimeter cinnamon stick
  • 1 teaspoon orange rind, finely grated

How to Make

  • Step 1: Combine the thawed frozen cranberries, orange juice, brown sugar, cinnamon stick and finely grated orange rind in a medium saucepan and cook over low heat, stirring for about 3 minutes or until sugar dissolves.

  • Step 2: Increase the heat to medium-high and bring to the boil; reduce the heat to medium and simmer, stirring occasionally, for 6-10 minutes or until mixture thickens slightly. (Remove when the consistency is as you like it).

  • Step 3: Remove from heat and discard cinnamon stick and set aside for 15 minutes to cool.

  • Step 4: Transfer the relish to a small serving dish & place a piece of plastic wrap directly on the surface of the relish until it is completely covered then place in the fridge for 1 1/2 hours to chill.
