Step by Step Method

Step 1

Place potatoes, carrots, leeks and bacon in a large, heavy bottom pot.

Step 2

Add water and bring contents to a boil.

Step 3

Add remaining ingredients.

Step 4

Cover and simmer for 30 minutes, until vegetables are tender.

Step 5

Add cream; return to stove-top and heat through, do not boil.

Step 6

Puree soup with an immersion blender until smooth and creamy.

Step 7

Pour into serving vessels and top with cheese or bacon or both, if using.

I made this as directed except I didn't puree. I thought this was good. I think it would be good with a little red pepper flakes. I made this for Food Friends and Fun on the What's on the Menu game. PS- I put this in the blender after we ate and the soup cooled off. It's better blended, I think.

Bea please tell your hubby his soup is fantastic! My mom loves potato soup so I sent some over to her and she also loved his soup. I did add a cup or so of shredded cheddar instead of topping everyone's bowls and forgot to fry some bacon. Even without the garnish the soup was so very good! mmm good soup ! I just made half a recipe, turned out delicious even using 2% milk instead of cream, i can imagine it would be over the top with cream! and so easy to make. for the topping i used extra old sharp shredded cheese and crisped up bacon, loved it. Also used some garlic croutons cus i had to have a photo for the croutons, very good with them too. I'll be making this one again , thanks for posting.
