"Delicious winter food….I love mashed potato and cheese, the perfect combo. Not so great for the waistline… We only have a family of 3 so with the leftover mince its just perfect on toast for breakfast the next morning. To save time you can zap your spuds in the microwave instead of baking. Just pierce them with a fork, then wrap individually in a sheet of paper towel and cook until tender. Times will vary depending on your microwave. I always like to give my husbands opinion and not just my own. Verdict, he loved them!! Even managed to hide some veggies in there."

Step by Step Method

Step 1

Pierce potatoes all over with a fork. Place potatoes directly on an oven rack in a hot oven (200C). Cook for about 50 minutes or until tender. Remove. Cool slightly.

Step 2

Meanwhile make beef filling. Heat an oiled large frying pan over a medium high heat. Add onion. Cook stirring occasionally, until soft. Add mince. Cook, stirring and breaking up mince, for about 5 minutes, or until browned. Stir in remaining ingredients. Bring to the boil. Simmer, uncovered, for about 8 to 10 minutes or until thickened.

Step 3

Cut a third off the top of each potato. Using a spoon, scoop out flesh, leaving a 1cm thick shell. Place potato flesh in a large bowl. Scrape out potato flesh from tops and add to bowl.

Step 4

Add milk and half of cheese to potato flesh. Season with salt and pepper and mash to combine.

Step 5

Spoon beef filling into potato shell Top with mashed potato and sprinkle with remaining cheese.

Step 6

Cook in a hot oven (200C) for about 15 minutes or until heated through. Serve with steamed veggies.
