Ingredients

The ingredients are:
  • 3 pounds potatoes (6 large potatoes, scrubbed and dried)
  • 1/4 cup milk (hot)
  • 1 cup grated cheddar cheese
  • Veggies (steamed, to serve)
  • FOR BEEF FILLING
  • 1 large onion
  • 500 grams ground beef (mince)
  • 1/3 cup tomato paste
  • 1 carrot, grated
  • 1 cup water
  • 2 tablespoons worcestershire sauce
  • 2 gram beef stock cube (1 cube)

How to Make

  • Step 1: Pierce potatoes all over with a fork. Place potatoes directly on an oven rack in a hot oven (200C). Cook for about 50 minutes or until tender. Remove. Cool slightly.

  • Step 2: Meanwhile make beef filling. Heat an oiled large frying pan over a medium high heat. Add onion. Cook stirring occasionally, until soft. Add mince. Cook, stirring and breaking up mince, for about 5 minutes, or until browned. Stir in remaining ingredients. Bring to the boil. Simmer, uncovered, for about 8 to 10 minutes or until thickened.

  • Step 3: Cut a third off the top of each potato. Using a spoon, scoop out flesh, leaving a 1cm thick shell. Place potato flesh in a large bowl. Scrape out potato flesh from tops and add to bowl.

  • Step 4: Add milk and half of cheese to potato flesh. Season with salt and pepper and mash to combine.

  • Step 5: Spoon beef filling into potato shell Top with mashed potato and sprinkle with remaining cheese.

  • Step 6: Cook in a hot oven (200C) for about 15 minutes or until heated through. Serve with steamed veggies.
