"A recipe I have had for many years now. My children loved these when they were younger. Served with breakfast or as a side these are so yummy. These are wonderful served with sliced avocado and a drop of sour cream. The original recipe calls for deep frying, but I just use a pan and turn them over during cooking."

Step 1

Puree the corn in a food processor or blender, season to taste and add the egg, oil, milk, flour & baking powder.

Step 2

Heat oil in pan and cook tablespoons of the mixture (turning once) until golden brown and cooked through.

Step 3

Drain on absorbent paper and serve.
