Step by Step Method

Step 1

Shrimp ... In a medium size pot, boil the shrimp in salted water along with the Old Bay seasoning. Very important ... once the shrimp begin to turn pink and curl - they are done. Do NOT over cook. Remove, drain and let them cool. Once they are cool, peel and rough chop.

Step 2

Salad ... Add all the salad ingredients to a bowl and mix well. Then add in the shrimp and toss lightly to combine everything. Make sure to chill at least 1-2 hours before serving.

Step 3

Serve ... As mentioned, you can serve this just as a salad, make a sandwich on your favorite bread, roll, wrap or croissant; and you can even grill it too. Garnish with a lemon wedge and ENJOY!

i was looking for a light salad to use up some frozen prawns, this filled the bill very nicely, Just made enough for the two of us, turned out lovely. The old bay seasoning was great with the prawns. Thanks for posting.
