Step 1: Shrimp ... In a medium size pot, boil the shrimp in salted water along with the Old Bay seasoning. Very important ... once the shrimp begin to turn pink and curl - they are done. Do NOT over cook. Remove, drain and let them cool. Once they are cool, peel and rough chop.
Step 2: Salad ... Add all the salad ingredients to a bowl and mix well. Then add in the shrimp and toss lightly to combine everything. Make sure to chill at least 1-2 hours before serving.
Step 3: Serve ... As mentioned, you can serve this just as a salad, make a sandwich on your favorite bread, roll, wrap or croissant; and you can even grill it too. Garnish with a lemon wedge and ENJOY!
