Ingredients

The ingredients are:
  • Shrimp:
  • 1 pound large shrimp, uncooked and peel on (honestly, the shrimp will be chopped, so use what is on sale)
  • 1 teaspoon Old Bay seasoning
  • Salad:
  • 2 medium celery ribs, cut lengthwise and fine diced
  • 1 small onion, fine diced
  • 2 scallions, fine diced (white and green parts)
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon lemon zest
  • 1/4 cup mayonnaise (no miracle whip)
  • 1-2 teaspoons fresh parsley, fine minced
  • 1/4-1/2 teaspoon old bay seasoning
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Shrimp ... In a medium size pot, boil the shrimp in salted water along with the Old Bay seasoning. Very important ... once the shrimp begin to turn pink and curl - they are done. Do NOT over cook. Remove, drain and let them cool. Once they are cool, peel and rough chop.

  • Step 2: Salad ... Add all the salad ingredients to a bowl and mix well. Then add in the shrimp and toss lightly to combine everything. Make sure to chill at least 1-2 hours before serving.

  • Step 3: Serve ... As mentioned, you can serve this just as a salad, make a sandwich on your favorite bread, roll, wrap or croissant; and you can even grill it too. Garnish with a lemon wedge and ENJOY!
