Step by Step Method

Step 1

In a large saucepan or pot cook bacon over medium heat until crisp. Transfer to paper towels to drain. Pour out all but 3 tablespoons of the drippings from the pan. Add next 4 ingredients (-rosemary); sprinkle with salt and pepper. Saute until vegetables are crisp tender (5 minutes). Sprinkle flour over and stir cooking for another minute or so. Gradually add milk to the pot, stirring constantly and bring to a boil; reduce heat to medium and cook until slightly thickened, stirring often (5 minutes).

Step 2

Add potatoes, clams with the juice, and drained corn. Bring to a boil; reduce heat to medium low and simmer until potatoes are tender, stirring often (10 minutes). Season to taste with salt and pepper.

Step 3

Divide soup into bowl; sprinkle with bacon and parsley.

Ten stars all the way! This is a delicious chowder that tastes so rich, but has no cream! I only made a half recipe for the two of us, using two cans of clams and fresh rosemary from the garden. The 3 slices of bacon in the half-recipe didn't give off much fat, so I did have to add a small dab of butter to cook the veggies. It was very hearty- a meal in a bowl. Better than most restaurant clam chowders, too! Thanks for sharing - we'll be having this again!

Delicious chowder! I added creamed corn instead of whole kernel for an extra creamy broth. It really added to the overall flavor of the chowder and it couldn't have tasted better. A new favorite!

I loved it today for lunch. I cut the recipe down for just me. I made a couple of changes too. I used cream style corn to make it creamier and used 1 whole potato because I love it chuck full of potato. Loved the herbs too by the way!
