Step by Step Method

CINNAMON FILLING


Step 1

Mix the three ingredients together. Place in a disposable piping bag and snip the end off or use a Ziploc bag. Set aside. When ready to use snip the corner of the Ziploc bag off.

PANCAKES


Step 2

Mix the dry ingredients in one bowl, and the wet ingredients in another bowl. Stir them together until everything is moistened leaving a few lumps. Set aside.

Step 3

Heat your griddle to exactly 325 degrees. You don't want these too cook too quickly, and you won't want your cinnamon to burn.

Step 4

Make desired size pancake on greased griddle, and then using the piping bag and starting at the center of the pancake, create a cinnamon swirl. Wait until the pancake has lots of bubble before you try to turn it. You will find that when you turn it the cinnamon swirl will melt. The cinnamon will melt out and create the craters which the cream cheese glaze will fill.

CREAM CHEESE GLAZE


Step 5

In a microwave safe bowl melt the butter and cream cheese and then stir together. Whisk in the confectionary sugar and vanilla. Add a little milk, if needed, to make it a glaze consistency.

Step 6

Place pancake on plate, then cover with cream cheese glaze.

I made a half a batch of these for my husband and I and we both were amazed at how delicious they were. They looked just like a cinnamon roll sitting on our plates and tasted so delicious with a tablespoon of unsweetened strawberry sauce on top of the glaze to balance out the sweetness. We love them!

These pancakes are extra delicious and not difficult to make. I added walnuts in with the pancake batter for a little more fiber and we loved each bite more than the last, and ate until our tummies were full to the brim!
