Step by Step Method
Step 1
Preheat oven to 350 degrees F. Grease 12 muffin cups.
Step 2
In a bowl, sift first 7 ingredients together.
Step 3
In a small bowl, combine the egg, milk and oil; mix slightly until combined.
Step 4
Add the milk/oil mixture to the dry ingredients; stirring JUST until combined (don't overmix, lumps in the batter is okay). gently mix in the chopped pecans and/or chocolate chips.
Step 5
Spoon 2/3 full into prepared muffin cups.
Step 6
Bake for 20 minutes, or until golden brown.
