  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup packed brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (can use more if you like)
  • 1/8 teaspoon nutmeg
  • 1 large egg, slightly beaten
  • 1/2 cup oil (vegetable oil)
  • 1 to 2 teaspoons vanilla
  • 1/2 cup milk
  • 1/2 cup chopped pecans
  • 1/3 cup mini chocolate chips (optional)

How to Make

  • Step 1: Preheat oven to 350 degrees F. Grease 12 muffin cups.

  • Step 2: In a bowl, sift first 7 ingredients together.

  • Step 3: In a small bowl, combine the egg, milk and oil; mix slightly until combined.

  • Step 4: Add the milk/oil mixture to the dry ingredients; stirring JUST until combined (don't overmix, lumps in the batter is okay). gently mix in the chopped pecans and/or chocolate chips.

  • Step 5: Spoon 2/3 full into prepared muffin cups.

  • Step 6: Bake for 20 minutes, or until golden brown.
