Cinnamon Apple Rings
"An old-timey recipe that I remember from a neighbor. Her mom used them on the holiday hams, but I remember sneaking slices from the kitchen. LOL. Time does not include chilling and marinating time."

Step by Step Method
Step 1
Add the lemon juice to 2 cups of water.
Step 2
Peel and core apples - slice into ½ inch thick rings. Drop the apple rings in the lemon water as you go.
Step 3
Heat 1/2 cup of the remaining water and the cinnamon candies in a saucepan. Stir often until the candy is completely melted, adding water as needed to keep the syrup from getting thick. Watch them carefully, so they don't stick and burn.
Step 4
Add the whole cloves and cinnamon sticks to the melted candy. Stir.
Step 5
Drain the apple rings and pat dry. Gently stir them into the syrup. Cover and simmer, stirring occasionally, until apples are tender - about 15 minutes.
Step 6
Gently transfer the apple rings to a GLASS container (don't use plastic!), and cover with the syrup.
Step 7
Cover tightly and refrigerate overnight. Remove the cloves and cinnamon sticks before using.
Step 8
These will keep, refrigerated, for a week.
