Step by Step Method

Step 1

Preheat oven to 200C/180C fan forced.

Step 2

Grease and line a 26cm x 16cm (base measurement) slice pan extending paper at long sides for handles.

Step 3

Cut the zucchini in half lengthwise and then cut into long thin strips

Step 4

Heat oil in a large frying pan over moderate heat and add leek and sausage and cook and stir for 5 minutes or until leek is soft and then cool slightly.

Step 5

Whisk eggs, cream, cheddar cheese and thyme in a large bowl and stir in leek mixture and then pour mixture into prepared pan and arrange the zucchini strips over top of egg mixture and sprinkle with parmesan and bake for 20 minutes or until just set at centre.

This is really good -- a complete light dinner accompanied with a tossed salad. Instead of the leek I used onion and I am not sure if the chorizo I used was cured -- I used the type that you have to take the casing off of (8 oz). I also used extra cheese and probably used the wrong size pan, but it all worked together and was very good! Thanks for sharing!

Wonderful! All the ingredients in this recipe work together beautifully! In addition to the posted ingredients I added some sliced red onions I had in the fridge and also added some white wine to the chourico saute. It came out Awesome tasting! Thank you ImPat for sharing!
