Ingredients

The ingredients are:
  • 1 zucchini
  • 2 teaspoon oil (vegetable or olive oil)
  • 1 leek, pale section only, thinly sliced
  • 1 cured (130 grams) chorizo sausage (finely chopped)
  • 8 large eggs (at room temperature)
  • 1/2 cup half and half (reduced fat cream)
  • 3/4 cup low-fat cheddar cheese, grated
  • 2 teaspoons thyme, chopped
  • 2 tablespoon Parmesan cheese, freshly grated

How to Make

  • Step 1: Preheat oven to 200C/180C fan forced.

  • Step 2: Grease and line a 26cm x 16cm (base measurement) slice pan extending paper at long sides for handles.

  • Step 3: Cut the zucchini in half lengthwise and then cut into long thin strips

  • Step 4: Heat oil in a large frying pan over moderate heat and add leek and sausage and cook and stir for 5 minutes or until leek is soft and then cool slightly.

  • Step 5: Whisk eggs, cream, cheddar cheese and thyme in a large bowl and stir in leek mixture and then pour mixture into prepared pan and arrange the zucchini strips over top of egg mixture and sprinkle with parmesan and bake for 20 minutes or until just set at centre.
