"An awesome easily made chicken stock I have been making for years. Great in Chinese or Asian recipes calling for chicken broth/stock. Use amount of bones and chicken pieces on hand, add to the soup along with green onions and ginger root, so easy-so good!"

Step 1

Place chicken bones,green onions and ginger root in large soup pot.

Step 2

Add water (assure chicken bones and pieces are covered)

Step 3

Over medium high heat bring to a boil, skim impurities that come to the top.

Step 4

Reduce heat, simmer 45 to 60 minutes.

Tasty chicken stock this is. The only change made here was to add a bit of salt . I doubled the recipe and drank this all up in a couple of days for a healthy fast.

Lovely stock! I doubled the recipe, using a whole mature chicken (cut-up), and I could not resist tossing in a handful of star anise. Made an asian soup with this wonderful stock using what I had on hand, and the flavour was awesome! Thank you Gerry for another keeper! Made for Billboard Recipe Tag.
