"This is a combination of recipes from our national supermarkets. Prep times does not include peeling prawns etc. But it took me 35 minutes to do 20."

Step by Step Method

Step 1

Cook the pasta in a large saucepan of boiling water following packet directions or until al dente, drain, reserving 1/4 cup (60 ml) of the pasta water.

Step 2

Meanwhile, heat oil and butter in a large deep frying pan over low heat and add the garlic and 1/2 the chilli and cook, stirring occasionally, for 2-3 mins or until aromatic.

Step 3

Add the prawns and lemon rind to the pan and cook, stirring, for 3 mins or until prawns start to change colour and then add cream, lemon juice and reserved pasta water and bring to a simmer.

Step 4

Season and add spinach and pasta to the frying pan and toss to combine.

Step 5

Divide among serving bowls and sprinkle with chilli, to serve, (optional on the chilli).

We love shrimp and chiles and pasta. What I didn't take into account is that I didn't know what thickened cream was, so I just used 1/2 and 1/2 and it was super liquid-y. Couldn't find a long red chile, so used part of a poblano. But the taste was still great! I'll just have to come to Australia and try again with the correct ingredients! LOL!
