Step 1: Cook the pasta in a large saucepan of boiling water following packet directions or until al dente, drain, reserving 1/4 cup (60 ml) of the pasta water.
Step 2: Meanwhile, heat oil and butter in a large deep frying pan over low heat and add the garlic and 1/2 the chilli and cook, stirring occasionally, for 2-3 mins or until aromatic.
Step 3: Add the prawns and lemon rind to the pan and cook, stirring, for 3 mins or until prawns start to change colour and then add cream, lemon juice and reserved pasta water and bring to a simmer.
Step 4: Season and add spinach and pasta to the frying pan and toss to combine.
Step 5: Divide among serving bowls and sprinkle with chilli, to serve, (optional on the chilli).
