"A favourite at our house, a recipe that has made it's way into a number of our local fund raiser cookbooks thanks to the sharing of a local teacher extraordinaire who is also an awesome cook! Family and friends love Chili Cornbread! A delicious casserole to take to pot lucks and gatherings - makes for an empty pan and recipe requests."

Very nice Gerry! I used up a whole green bell pepper and used 1 full onion so as not to waste. I also added a touch of chili prepared seasoning in addition to the taco mix and about 4-5 garlic cloves (because I'm a garlic lover). I can definitely see how well this recipe would go over for a pot luck and it went over well with my family this evening for dinner. Thank you Gerry for sharing.

What an easy dinner. Made a couple changes to the chili, only had black beans so substituted for the kidney beans. Also used my own spice mix, which included cocoa, which made for chili mole. Only used 1/2 the chili for the casserole since there are only two of us. Froze the rest for another time! Photo to follow!
