Step by Step Method

Step 1

Heat oil in large saucepan over medium-high heat. Add 1 1/2 cups onions and next 3 ingredients. Sauté until beef is cooked through, breaking up with spoon, about 5 minutes. Add beans with liquid and tomatoes.

Step 2

Simmer until thickened, about 15 minutes. Mix in cilantro, salt, and pepper.

Step 3

Place sourdough toasts on plates. Top with chili, cheese, and remaining chopped red onions.

Daily Inspiration

These sloppy joes were really tasty and a nice change of pace from what I normally make. At the last minute, DH didn't want the kidney beans so I apologize for leaving them out. The best part is that I have leftovers for a sandwich tomorrow.

This is a speedy dish, making it perfect to serve during a weeknight. I particularly liked the chili aspect integrated into a sloppy joe. Because I had tomatoes in the fridge that I needed to use up, used it instead of the canned tomatoes and added some cumin in addition to the chili powder. I particularly loved the fresh cilantro thrown in at the end. It does make more than 2 servings but used the remainder as a topping on nachos chips in the oven. Yum! Thank you Marra for sharing.

Well... I'm giving this five stars because I totally screwed up this easy recipe and it was still good! I dumped in the whole can of tomatoes and then had to cook all the liquid down. Still was a good meal. Yep. That's me.
