Step by Step Method
Step 1
Preheat oven to 200C/180C fan forced.
Step 2
Cook the pasta in a large saucepan of salted boiling water following packet directions or until al dente and then drain.
Step 3
Meanwhile, heat the oil in a large saucepan over medium-high heat and add the onion and capsicum and cook, stirring, for 5 minutes or until softened and now add the beef and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until browned.
Step 4
Add the taco seasoning to the pan and cook, stirring, for 1 minute or until well combined and then add the pasta, salsa and cheese sauce and season, to taste and cook, stirring, until combined and warmed through.
Step 5
Transfer to a baking dish and smooth the surface and scatter with cheese and bake for 20-25 minutes or until golden.
Step 6
Serve topped with sour cream, tomato, avocado and shallot.
