Cheesy Mushroom Hamburger Rice Bake

"I was looking for a recipe to make for a Chopped style game (Ready Set Cook) and was excited that this casserole came together so well. While I made it for the game, I'll be making this often in the future! I love rice that is similar to a risotto sticky texture, so I used medium grain rice. I'm guessing it would work with long grain rice or brown rice, though I would add time for brown rice. I did use a cheese only available in St. Louis MO (provel)...it has an American style of creaminess when melted but a totally different flavor. It's used on pizza in place of mozzarella here, so I wrote this up to use mozzarella. Feel free to use your favorite melty cheese."

Step by Step Method

Step 1

Preheat oven to 375 degrees.

Step 2

In a small skillet, heat olive oil to medium high. Add onion and saute until lightly browned. Add mushrooms and continue cooking until mushrooms are starting to brown. Then add spinach and continue cooking until spinach starts to wilt. Pour into medium bowl and set aside.

Step 3

In the same pan, brown ground beef. When the ground beef is nearly cooked, add Italian seasoning, fennel, salt and pepper. Saute for another minute until all meat is browned. Drain well and add to onion mixture. Stir until combined.

Step 4

Spray a 8x8 square baking dish with cooking spray (I use an olive oil spray). Pour meat mixture into the bottom of the pan.

Step 5

In a separate bowl, combine cream soup (or homemade equivalent), rice and 1 slice of cheese, ripped into small pieces.

Step 6

Pour over meat mixture, smoothing it out with a spoon.

Step 7

Cover with foil and bake 30 minutes, or until most of the liquid is absorbed.

Step 8

Remove cover and sprinkle with the 2 remaining slices of cheese, torn into small pieces. Bake uncovered 5 more minutes until cheese is melted.

Very good and this recipe is also very easy to double. I used cream of mushroom soup instead on the soup indicated and used a bit more spinach and cheese than indicated (even with doubling) also. Easy to make and enjoyed by all. Thanks for sharing!

Made for the RSC game at FF&F - I have many reasons for liking this casserole so much. It's a tasty easy-fix that's ingredient-friendly. Thx for allowing me to sub broccoli for the spinach for the sake of my DH. I'm particularly fond of recipes that combine the meat, veggie & starch food groups in such a flavorful way. For just 2 of us, I often halve recipes or find ways to downsize them, but I doubled your recipe to create a 2nd casserole for our freezer. I couldn't imagine this dish w/o garlic, so I added a generous amt of it as my only other chg. Thx for sharing your creation w/us & we will look forward to its encore. :-)
