"I think that everyone should have ... one of these 'gourmet, unique, or decadent' recipes on hand for special occasions. Obviously, caviar is NOT something that one buys every day; also, it can be quite costly. However, you need to remember that this is for a special occasion. This vinaigrette is fantastic over poached or baked fish; especially salmon, cod, swordfish, or any thick white fish. It is a strong vinaigrette, so you you want a sturdy fish to hold up to the flavor or the caviar. Baby greens, grilled asparagus, or baby potatoes are also wonderful."

Vinaigrette ... Add all the ingredients to a small bowl and whisk well to combine. Then, slowly add the caviar and mix gently. Cover with plastic wrap, and make sure to let it rest 30-60 minutes before serving.
Step 2
Serve ... Drizzle over your favorite greens, grilled or poached fish; or your favorite vegetables or potatoes. It is definitely NOT an "every day" recipe; but, it's make a wonderful "special occasion" dish. ENJOY!
