Step 1

Cook the pasta according to the package directions, omitting salt. Drain in a colander over a bowl, reserving 1/3 cup pasta cooking liquid.

Step 2

Heat a large skillet over medium-high heat. Combine the Cajun seasoning and the shrimp in a medium bowl; toss to coat.

Step 3

Add 1 tablespoon oil to the pan; swirl to coat. Add the shrimp mixture to the pan; cook 2 to 3 minutes oruntil the shrimp are done. Remove the shrimp mixture from the pan. Wipe the pan clean with paper towels.

Step 4

Add the remaining 1 tablespoon oil to the pan; swirl to coat. Add the onion, bell pepper, celery, and 1 tablespoon thyme; cook 5 minutes, stirring occasionally.

Step 5

Add the red pepper and garlic; cook 3 minutes. Add the reserved 1/3 cup cooking liquid, salt, bay leaves, and tomatoes; bring to a boil.

Step 6

Reduce heat, and simmer 6 minutes or until thickened. Discard the bay leaves. Remove the pan from heat; stir in shrimp and pasta.

Step 7

Stir in half and half. Cook 1 minute over medium heat or until thoroughly heated. Sprinkle with the remaining 1 1/2 teaspoons thyme.

This was great! I am a wimp, so used a little less spicy stuff! DH doesn't like large shrimp, so I cut them up for him. He asked what kind of protein was in this meal - I won't bother cutting shrimp next time - lol! We both loved this and gobbled up all I made (a bit more than half of the original amount). Yum!

Made exactly as written, except used 10 cloves of garlic and a bit extra cayenne (we like spicy!). Absolutely delicious! Two of us ate most of it, with a bit left over for lunch tomorrow. Yes, we're piggy - but this was so goooood!

Super awesome dinner but only 2 of us ate it and there's a little bit leftover. Ooops! Okay, we were really hungry and this spicy dish was so good that we couldn't stop eating! I added a bit of parmesan to this dish as well, otherwise made as listed. Thanks breezermom! :)

Scaled back for two serves after buying just over 250 grams of green banana prawns and ate half for dinner and reheated the other half for lunch today and was enjoyed both times. I did omit the celery as I did not have any and as we have a glut of cherry tomatoes I used fresh tomatoes and they worked well in the dish. Thank you breezermom made for Pick Me tag game under the 48 hour rule.
