Step by Step Method

Step 1

In a small bowl combine water and chia seeds; cover and let stand at room temperature for 12-24 hours before using. Stir before using.

Step 2

In a saucepan over low heat add chocolate, stirring until melted. Remove from heat. Let cool.

Step 3

Preheat oven to 350 degrees F.

Step 4

Line 8x8x2 inch pan with foil, extending foil over the edges of the pan. Grease foil and set aside.

Step 5

Stir sugar into the cooled chocolate. Add eggs, one at a time, beating with a wooden spoon after each addition until combined. Stir in chia mixture and vanilla.

Step 6

In small bowl combine dry ingredients (flour - espresso powder). Stir flour mixture into chocolate mixture. Stir in nuts, if using.

Step 7

Pour batter into prepared pan; spreading evenly.

Step 8

Bake for 30 minutes. Cool in pan on ware rack.

Step 9

If desired top with espresso powder and powdered sugar.

Step 10

Using the edges of the foil, lift the uncut brownies out of pan and then cut into bars.
