Step by Step Method

Step 1

Pick over beans.

Step 2

Wash and then soak overnight in 8 cups water.

Step 3

Drain.

Step 4

In large stock pot, saute the onions and garlic in bacon grease until just tender.

Step 5

Place beans in pot and cover with water about 1/2 inch above level of peas.

Step 6

Stick the cloves in ham hock and add to pot.

Step 7

Add the rest of the ingredients.

Step 8

Simmer about two hours or until beans are tender.

Step 9

Remove the bay leaf, cloves and bones.

Step 10

Chop up meat from ham hock.

Step 11

Season to taste.

Step 12

Better if chilled overnight and reheated the next day.
