Ingredients

The ingredients are:
  • 4 tablespoons bacon grease
  • 1 cup onion, chopped fine
  • 1 clove garlic, minced
  • 8 cups water
  • 1 pound dried black eyed peas
  • 1 bay leaf
  • 2 whole cloves
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 12 ounces ham, cubed (1-1/2 cups)
  • 1 pound smoked pork ham hock
  • 1/4 teaspoon baking soda

How to Make

  • Step 1: Pick over beans.

  • Step 2: Wash and then soak overnight in 8 cups water.

  • Step 3: Drain.

  • Step 4: In large stock pot, saute the onions and garlic in bacon grease until just tender.

  • Step 5: Place beans in pot and cover with water about 1/2 inch above level of peas.

  • Step 6: Stick the cloves in ham hock and add to pot.

  • Step 7: Add the rest of the ingredients.

  • Step 8: Simmer about two hours or until beans are tender.

  • Step 9: Remove the bay leaf, cloves and bones.

  • Step 10: Chop up meat from ham hock.

  • Step 11: Season to taste.

  • Step 12: Better if chilled overnight and reheated the next day.
