Step 1: Pick over beans.
Step 2: Wash and then soak overnight in 8 cups water.
Step 3: Drain.
Step 4: In large stock pot, saute the onions and garlic in bacon grease until just tender.
Step 5: Place beans in pot and cover with water about 1/2 inch above level of peas.
Step 6: Stick the cloves in ham hock and add to pot.
Step 7: Add the rest of the ingredients.
Step 8: Simmer about two hours or until beans are tender.
Step 9: Remove the bay leaf, cloves and bones.
Step 10: Chop up meat from ham hock.
Step 11: Season to taste.
Step 12: Better if chilled overnight and reheated the next day.
