Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente, drain.

Step 2

In a bowl, mix dressing: add store bought jarred pesto, mayonnaise, grated Parmesan cheese, water, olive oil and mix dressing well.

Step 3

Pour pesto dressing over pasta and mix well to evenly coat all of the pasta sides.

Step 4

Add onions, chicken and grape tomatoes and toss again to combine all ingredients.

Step 5

Add a little salt and cracked pepper prior to serving.

Step 6

Put in fridge for a few hours to get cold.

Step 7

Serve pasta salad topped with pine nuts.

I used the last of my homemade pesto. This came together so easy b/c used rotisserie chicken. What a great salad for a hot summer day - or any day! I forgot to add the pine nuts until after I took the picture - and I actually used walnuts instead! This would also be great with additional veggies, like maybe zucchini, peppers...
