  • Pasta
  • 12 ounces dry bowtie pasta
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Dressing
  • 1/2 cup prepared pesto ( jarred)
  • 1 cup mayonnaise
  • 4 ounces parmesan cheese, grated
  • 1/4 cup olive oil
  • 2 tablespoons water
  • Salad
  • 8 ounces cooked boneless skinless chicken breast, chopped
  • 1/4 cup red onions, diced
  • 1 cup grape tomatoes, quartered
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup pine nuts

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente, drain.

  • Step 2: In a bowl, mix dressing: add store bought jarred pesto, mayonnaise, grated Parmesan cheese, water, olive oil and mix dressing well.

  • Step 3: Pour pesto dressing over pasta and mix well to evenly coat all of the pasta sides.

  • Step 4: Add onions, chicken and grape tomatoes and toss again to combine all ingredients.

  • Step 5: Add a little salt and cracked pepper prior to serving.

  • Step 6: Put in fridge for a few hours to get cold.

  • Step 7: Serve pasta salad topped with pine nuts.
