"This is really good but leftovers are even better the next day. The amounts of onion, celery, carrots, meat, etc. don't need to be exact"

Step by Step Method
Step 1
Heat oil in a skillet over medium heat; add chopped onion; Cook until translucent, then add the celery and carrot and garlic; cook for 2 minutes more.
Step 2
Add the ground beef, salt, and pepper; cook until meat is browned, 15 minutes. Add cream, simmer over medium-low heat stirring frequently, until it has reduced by about half.
Step 3
Add nutmeg and stir (no more than 1/8 teaspoon).
Step 4
Add the wine, let it simmer until it’s evaporated, then add the tomatoes and stir thoroughly to coat all the ingredients. Bring to a light boil.
Step 5
When the tomatoes begin to bubble, turn the heat down so the sauce cooks at the lowest of simmers (just a little bubble here and there).
Step 6
Simmer over very low heat for 3 hours, tasting and seasoning with more salt and pepper if needed, if sauce seems dry add in more water during cooking.
Step 7
Serve over hot cooked spaghetti or pasta of your choice (I like spaghetti), top with Parmesan cheese and a small amount of parsley.
